Buttermilk Caramel Syrup

INGREDIENTS
· 1 1/2 cups white sugar
· 2 cups buttermilk
· 1 cup butter
· 1 tablespoons corn syrup (optional)
· 2 teaspoon baking soda
· 2 teaspoons vanilla extract

DIRECTIONS
1. In a saucepan, stir together the sugar, buttermilk, butter, corn syrup, and baking soda. Bring to a boil, and cook for 5 minutes. Remove from the heat, and stir in the vanilla.
Truck-Stop Pancakes

INGREDIENTS
· 5 eggs
· 1 1/2 cups milk
· 6 tablespoons butter, melted
· 5 cups buttermilk
· 5 cups all-purpose flour
· 5 teaspoons baking powder
· 5 teaspoons baking soda
· 1 pinch salt (optional)
· 5 tablespoons sugar
DIRECTIONS
1. In a large bowl, whisk together the eggs, milk, butter and buttermilk. Combine the flour, baking powder, baking soda and sugar; stir into the wet ingredients just until blended. Adjust the thickness of the batter to your liking by adding more flour or buttermilk if necessary.
2. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Continue with remaining batter.

· 3/4 cup milk
· 3 tablespoons butter, melted
· 2-1/2 cups buttermilk
· 2-1/2 cups all-purpose flour

· 1/2 pinch salt (optional)
· 2 tablespoons and 1-1/2 teaspoons sugar
Mango Salsa

½ medium onion, chopped
2 T olive oil
2 ripe mangos, diced
1 bell red peppers, chopped
2 T copped cilantro
2 T lime juice
½ tsp. Salt
¼ tsp pepper
1 T minced green onion

Saute onion in olive oil until lightly browned. Toss all ingredients together gently.
No Bake Cookies

Combine in medium saucepan:

2 C sugar
3 Heaping TBSP Cocoa
1 TBSP Butter

Add ½ C Milk
Stir well
Bring to a boil-test in cold water (soft ball stage)

Turn off heat and add:

½ tsp vanilla
4 TBSP Peanut Butter
2 ½ C Oatmeal
½ C Nuts (optional)

Stir well and spoon onto waxed paper.
Cool.
Pumpkin Cookies

1 Box Spice Cake Mix
1 15 oz Can of pumpkin
1 bag of chocolate chips

Mix all together.
Drop cookie dough on greased cookie sheet with a spoon.

Bake at 350 F for 15 minutes
Sugar Cookies

3 cubes Butter
2 ½ C sugar

4 eggs
1 tsp salt
1 tsp lemon extract
1 T vanilla
1 C Sour Cream
7 C Flour
1 tsp Baking Soda
1 tsp Baking Powder

First whip butter and sugar together. Add sour cream, then eggs, then the combined dry ingredients, and vanilla.

Chill several hours.
Roll the cookies out and cut them thick.
Bake at 375 F for 6-8 mins

Icing

3 C Powdered Sugar
1/3 C butter
pinch of salt
¼ C Milk
1 ½ tsp vanilla
Oatmeal Raisin Cookies

3 Eggs
½ C Crisco
½ C Butter
¾ C Sugar
¾ C Brown Sugar

2 C Flour
½ tsp Baking Soda
½ tsp. Baking Powder

2 C oatmeal (old fashioned)
1 C Chopped Nuts
1 C Raisins

Whip eggs and sugars, then add Crisco and butter, mix again. Add combined dry ingredients, then oatmeal, nuts and raisins. Bake at 350 F for 12 mins.
Chocolate Chip Cookies

2 Eggs
½ C Crisco
½ C Butter
¾ C Sugar
¾ C Brown Sugar

2 ¼ C Flour
1 tsp Baking Soda
1 tsp Salt
1 tsp Vanilla

1 pkg. Chocolate chips
1 C Chopped Nuts

Whip eggs and sugars, then add Crisco and butter, mix again. Add combined dry ingredients. Bake at 375 F for 9 mins.
For Double Chocolate Chip Cookies

Add:

½ C Cocoa
1 pkg. white chocolate chips
NO NUTS!
Funeral Potatoes

12 large potatoes
2 (10 ¾ oz.) cream of chicken
2 C sour cream
1 C grated cheddar cheese
½ C butter, melted
½ C chopped onion
2 C crushed corn flakes
2 T butter, melted

Peel potatoes & boil for 30 minutes. Cool & grate into a 9 x 13 pan. Combine soup concentrate, sour cream, cheese, the ½ C butter and onions. Gently blend into potatoes. Combine crushed corn flakes & 2 T butter. Sprinkle on top.
350 F for 30 minutes.
Frog Eye Salad

1 1/3 C acini de pepe, uncooked
1 (20 oz) can pineapple chunks, drained
1/4 C pineapple juice
1 3/4 C milk
1/4 sugar
1 (3.4 oz) pkg vanilla instant pudding
1 (8 oz) can crushed pineapple, drained
2 (11 oz) cans mandarin oranges, drained
3 C mini marshmallows
1/2 C coconut
2 C cool whip

Cook pasta 11 mins. Rinse w/ cold water, drain well. In large bowl, beat reserved pineapple juice, milk, sugar and pudding for 2 mins. Gently stir in pasta and remaining ingredients. Cover. Refrigerate at least 5 hours.
Famous Chef Rolls

4 C milk
1 C sugar
5 tsp salt
4 pkg. yeast
4 eggs
1 C shortening
10-15 C flour

Reserve 1 C liquid for dissolving yeast. Heat other milk w/sugar, salt, shortening. Let liquid cool to warm. Add a couple of cups of flour and mix well. Add beaten eggs and yeast that has been dissolved in 1 C water (105-115F). Start adding flour until stiff enough to transfer to board to be kneaded. Knead for about 8-10 mins. Be sure to keep a light dough instead of a heavy dough. Let rise until double in bulk, punch down and let rise. Bake at 425 F for 12-15 mins or 20 mins at 375 F.

Mom's Whole Wheat bread

In the mixer:

2 qt water (lukewarm)
3 C whole wheat flour
2 pkg yeast
1 T salt
1/3 C oil
1-2 T sugar
1/2 C honey
White flour until the dough cleans the bowl.
Mix for 10 minutes
Pour out, let raise
Put in bread pans
Let raise
375 F to start. Check every 15 min. if browning too fast.
Turn down to 325 F. and check every 15 min.
Total bake time is 1 hour
Nobby Apple Cake

3 T Margarine
1 C Sugar
1 Egg
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 tsp baking soda
1 C flour
3 C peeled and diced apples (Granny Smith)
1/4 C nuts
1 tsp vanilla

Cream margarine and sugar together. Add Egg
Combine all dry ingredients and add to the previous mixture. Mix
Add apples, nuts and vanilla last. Mix.

Pour into greased 8" pan. Bake for 350 F for 40-45 min
Serve hot or cold.
